Portion cooked rice into a ziplock bag, flatten into sections, and freeze until solid. Later, snap off a portion, place on a plate, and microwave for about two minutes to reheat.

Spread fresh or leftover rice into an even layer on a tray, cut into squares, then shallow fry until golden and crispy on both sides. Top with anything you like, such as spicy tuna.
