   Peel the cucumber completely, then cut it in half lengthwise. Remove the seeds if there is an excessive amount, as they contain a lot of water.

   Grate the cucumber using a box grater with large holes. Strain the grated cucumber in a stainless steel strainer, making sure it's not aluminum, as aluminum can discolor vegetables. Allow it to drain for several hours or squeeze out excess moisture using a potato ricer, cheesecloth, or muslin fabric.

   Strain the Greek yogurt in a stainless steel strainer, placing a small bowl underneath if needed to prevent the strainer from touching the bottom. Allow it to drain for a couple of hours to remove excess whey.

   In a clean bowl, combine the strained yogurt with the drained cucumber. Add minced fresh garlic, fresh lemon juice, and salt to taste.

   Season with fresh black pepper, a small amount of white wine vinegar or white balsamic vinegar for acidity, and drizzle with olive oil or garlic-infused olive oil.

   Grate fresh lemon zest directly into the sauce using a microplane grater to wake up all the flavors. Optionally, add a pinch of dill or Aleppo pepper for extra flavor and heat.
