A delicious steak sandwich made with leftover cooked steak, romesco sauce, rocket and crispy onion rings on focaccia bread. The combination of tender medium-rare steak, nutty romesco, peppery rocket and crunchy battered onion rings creates a perfect textural and flavour balance.

Roast red capsicums in a very hot oven for about 20 minutes until the skin blisters. Remove and cover with cling film to steam and soften. Once cooled, remove the stem and peel away the charred skin, then cut into chunks.

Blend the roasted capsicum chunks with 2 raw garlic cloves, toasted almonds, 2 tablespoons red wine vinegar, a pinch of salt and 3 tablespoons extra virgin olive oil until smooth and thick. Taste and adjust seasoning as needed.

Slice brown onion into thick rings, approximately half a centimetre thick.

Make the batter by whisking besan flour with water until the consistency resembles paint or pouring cream. Let it rest briefly; if it thickens as the flour hydrates, add a little more water to reach the desired consistency.

Mix a pinch of salt and white pepper into rice flour.

Dust onion rings in the seasoned rice flour, turning to coat all sides evenly.

Dip the floured onion rings into the batter and fry in batches in the hot oil at approximately 180°C for 3–4 minutes until golden and crispy. Season with a little salt immediately after removing from the oil.

Cut focaccia bread in half lengthwise to open it up.

Slice the cooled medium-rare steak into thin strips, cutting downward along the grain and removing any excess fat.

Spread a generous layer of romesco sauce on one side of the focaccia.

Layer the sliced steak over the romesco sauce.

Add a layer of fresh rocket (arugula) on top of the steak.

Top with the crispy fried onion rings.

Place the top half of focaccia over the filling and press gently to hold layers together. Cut into 2 or 3 portions as desired and serve.
