A traditional Middle Eastern fasting-period treat made with carob molasses and tahina, entirely free of animal products. The cookies are tender with warming notes of cinnamon and anise.

Sift flour and baking powder into a large mixing bowl. Add sugar, salt, cinnamon, and anise, then whisk well to combine.

Add tahina, water, olive oil, and carob molasses to the dry ingredients. Mix with a rubber spatula for 2 to 3 minutes until well incorporated. Cover and let rest for 30 minutes.

Using a small spoon, divide dough into 20 g portions and place on parchment-lined baking pans, leaving 1 inch between each cookie.

Roll each dough portion into a log about 12 cm long, then join the ends to form a ring shape.

Bake one pan at a time in a preheated 350°F (180°C) oven on the center rack for 15 to 17 minutes. Remove from oven and let cool completely on the parchment paper.

Once cooled, store the cookies in an airtight container or sealed plastic bag at room temperature.
