Prepare the wasabi root: remove leaf stalks one at a time, scrub thoroughly with a kitchen brush and rinse well. Trim remaining stalks while being careful not to remove the fresh center portion. Optionally trim protruding sides for a smoother texture. Shave off any blackened surface area. Quickly rinse and pat dry with paper towels.

Using the finest grater available, gently grate the wasabi in a circular motion starting from the end where leaf stalks are attached. The grating breaks down cells to release the pungent flavor. The aroma peaks about 5 minutes after grating, so grate fresh for each serving to enjoy at its best.

Version 1 (Simple Wasabi Bowl): Spread bonito flakes over the warm rice and top with grated wasabi. Drizzle with a small amount of soy sauce or dashi soy sauce, mix lightly and enjoy.
