Ingredients
Water
2 cups
Dashi packet
1
Kosher salt
~¼ tsp

Soy sauce
1 tsp
Yaki onigiri (grilled rice balls)
Warm, preferably freshly grilled or reheated

Mizuna (Japanese mustard greens)
Thinly sliced; can substitute with green onions or shiso leaves
~1 cup

Nori (seaweed)
Optional, for topping
~1 sheet

Steps

Add 2 cups of water and 1 dashi packet to a medium saucepan and heat over medium heat.

Once it comes to a boil, reduce heat to medium-low and gently shake the dashi packet to release more flavor.

Simmer for 2–3 minutes, then remove and discard the dashi packet.

Add salt and 1 teaspoon of soy sauce, then turn off the heat.

Thinly slice the mizuna; alternatively use green onions or shiso leaves.

Place a warm grilled rice ball in each serving bowl and top with the sliced mizuna and nori.

Pour the dashi broth carefully over the rice ball without fully submerging it, preserving the crispy exterior.

Reserve any remaining broth and add it gradually as you enjoy the dish.
