Wash the raw rice thoroughly with clean water several times until the water runs clear. Drain well and ensure the rice is completely dry.

Spread the rice in sunlight or under an oven on low heat for about 1 hour. The rice should crumble between your fingers and not stick together.

Grind the dried rice in a mixer to a fine powder. The flour should be smooth with no coarse grains remaining.

Add jaggery to the rice flour and mix thoroughly until evenly combined.

Add water gradually and knead the mixture into a firm dough. The dough should hold its shape without being too wet or too dry.

Divide the dough into small portions and roll them into smooth balls. Gently flatten them in your palm to form round shapes that hold together.

Gently tap the formed balls on the bottom of a pan to make them more compact and even.

Heat oil in a pan, starting with high heat and then switching to low heat. Maintain low heat throughout the cooking process.

Carefully place the formed sweets into the hot oil. They should hold their shape when poked with a finger, indicating both oil temperature and dough consistency are perfect.

Turn off the heat and allow the sweets to set and firm up in the oil.

Carefully remove the cooked sweets from the oil. They should be golden brown, crispy on the outside, and soft on the inside with perfect texture.
