Pour 2 cups of buttermilk into a resealable plastic bag. Add garlic powder, onion powder, salt, black pepper, and cayenne pepper. Stir the mixture until all spices are evenly distributed.

Add 2 lbs of bone-in, skin-on chicken pieces (a mix of legs and thighs) to the buttermilk mixture. Seal the bag, shake well to coat the chicken thoroughly, and refrigerate for at least 4 hours, preferably overnight.

In a large bowl, combine the all-purpose flour, salt, garlic powder, onion powder, paprika, and black pepper. Whisk everything together until well blended.

Remove the chicken from the refrigerator. One piece at a time, shake off the excess buttermilk mixture, then dredge thoroughly in the flour mixture, ensuring good coverage. Optionally, do a double dip for extra crispiness. Place the coated chicken on a baking sheet.

Preheat the air fryer to 400°F. Place the first batch of breaded chicken in the refrigerator while the air fryer heats up.

Arrange the breaded chicken pieces skin-side up. Spray them generously with cooking oil, then place them in the preheated air fryer basket skin-side down, avoiding overcrowding. Spray the basket lightly, then spray the chicken pieces again, including the tops.

Air fry the chicken at 400°F for 20 minutes total. At the 10-minute mark, flip the chicken pieces to ensure even cooking. Spray with oil again and continue cooking for the remaining 10 minutes.

Once the first batch is done, transfer it to a wire rack set over a baking sheet and keep warm in a 250°F oven while you cook the second batch of chicken.

Prepare and air fry the second batch following the same procedure. Once all chicken is cooked, transfer to a serving platter. Verify that the thickest part of the chicken has reached an internal temperature of 165°F for food safety.
