A classic American macaroni and cheese made with sharp yellow and white cheddar cheese in a rich cream sauce, combined with small pasta elbows and sweet peas. This is a dish Grandma Gina learned from family after immigrating to America and has been making for her family ever since.

All-Purpose Flour½ cup
Saltto taste1 tsp
Black Pepperto taste½ tsp
Whole Milk3 cups
Macaroni Pastasmall shape, elbows best1 lb
Sharp White Cheddar Cheeseshredded or cubed8 oz
Sharp Yellow Cheddar Cheeseshredded or cubed8 oz
Frozen Sweet Peascan increase up to 16 oz to taste

Melt the butter in a pot over medium heat, allowing it to fully melt.

Add the flour and mix well to create a roux. Season with a small amount of salt and black pepper.

Cook the roux for about 4 to 5 minutes to thicken slightly.

Gradually add the milk while stirring to combine smoothly.

Once the sauce is ready, add the shredded cheese and stir until it melts completely and the sauce becomes creamy.

In a separate pot, cook the macaroni in salted boiling water until tender. Drain the cooked pasta and add it to the cheese sauce.

If using frozen peas, boil them briefly and then mix them into the macaroni and cheese.

Serve the macaroni and cheese in bowls. Mix in the peas if desired and enjoy.
