   In a bowl, combine thinly sliced scallion, 1 tablespoon minced cilantro, 1 tablespoon chopped pickled jalapeños, 4 ounces shredded sharp cheddar, 4 ounces softened cream cheese, 1 teaspoon lime zest, and 2 teaspoons cornstarch. Mix until evenly combined.

   Spoon about 1 tablespoon of the filling into each jalapeño half, making sure it is flush with the edges.

   Cut 6 strips of thin-cut bacon in half crosswise to make 12 pieces. Wrap one piece of bacon around each filled jalapeño half, positioning the seam at the bottom to seal as it cooks.

   Place all 12 wrapped jalapeños in the air fryer basket in a single layer—they may touch but should not be stacked. Cook at 400°F (200°C) for 10 minutes, until the bacon is crispy and the peppers are tender. If needed, cook up to 14 minutes total.
