An easy all-in-one dish made in your air fryer. Juicy bell peppers stuffed with seasoned ground beef, fluffy cooked rice, and vibrant tomato sauce, topped with melted cheese.

Prepare ingredients by shredding about 1.25 cups of Colby Jack cheese, dicing approximately 200g of onion (one regular-sized or half a mega onion), and mincing 2-3 cloves of garlic.

Select four medium to large bell peppers, cut off the tops, and scoop out seeds and white membranes. If needed, trim the bottom slightly so peppers stand upright.

Place prepared peppers into a preheated air fryer set to 380°F and cook for 10 minutes until softened.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil shimmers, add diced onions and cook, stirring occasionally, for about 5 minutes until softened.

Remove pan from heat, add 1 pound of ground beef, and break it up while cooking evenly. Add the minced garlic and 1 teaspoon of Italian seasoning.

Continue cooking over medium-high heat for about 4 minutes until the beef is fully cooked and broken apart. Season with 0.75 teaspoon of salt and 0.25 teaspoon of black pepper.

Add 15 oz of canned diced tomatoes and 8 oz of tomato sauce, bring to a boil, and stir occasionally for about 5 minutes until the sauce thickens.

Remove mixture from heat and let cool for a minute. Fold in 2 cups of cooked rice.

Stir in 1 cup of shredded Colby Jack cheese and fold until evenly distributed.

Stuff each pepper with the filling, filling nearly to the top (about 1 cup of filling per pepper).

Top each stuffed pepper with about 1 tablespoon of shredded cheese.

Air fry at 380°F for about 2 minutes until the cheese is melted and the dish is ready to serve.
