Soft and crispy almond cookies with a distinct nutty flavour from almond flour, carefully sweetened with powdered sugar. Traditionally served during Chinese New Year as a delightful treat for guests.

Ingredients

almond flour~1½ cupsest.
wheat flour~¾ cupsest.
powdered sugar~¾ cupsest.
baking powder~1 tspest.
baking soda~¼ tspest.

egg yolkfor brushing on top of cookies~1est.

Combine almond flour, wheat flour, powdered sugar, baking powder, baking soda, and a pinch of salt. Sift the mixture to remove any lumps from the powdered sugar.

Add oil to bind the dry ingredients together and work the mixture until the dough begins to come together.

Cut almond pieces thickly and set aside. Shape the dough into small rounds of about 15 grams each, flatten them slightly, and place on parchment paper with space between each cookie.

Press each cookie gently with a fork to create an even surface, then go over the cookies again to flatten the edges and ensure they are level.

Brush egg yolk lightly over the surface of each cookie.

Place the chopped almond pieces on top of each cookie.

Place the cookies in the oven and bake until done.
