Ingredients
brinjal/eggplant
small brinjals
oil
onion
ginger
grated or crushed
garlic
salt

Cut small brinjals into four quarters each.

Heat oil and sauté onion, ginger, and garlic until softened to prepare the tempering base.

Soak the cut brinjals in water to prevent discoloration, then add to the cooked tempering along with salt and green chillies.

Mix everything thoroughly, cover, and cook on high heat until the brinjals soften and begin to turn slightly red.

Add the red chilli powder to the cooked brinjals.

Add a little water, cover with a lid, and continue cooking.

Prepare the tempering separately by cooking cumin seeds and red chillies until fragrant.

Once the brinjals are completely tender, add tamarind paste for tanginess.

Mash the brinjals using a masher or fork until reaching a mashed consistency.

Pour the prepared cumin and chilli tempering into the mashed brinjals, cover to trap the flavours inside.
