Shred the 10 tbsp of frozen Danish creamery butter and combine with flour. Add 6 tbsp of ice water, adding more as needed until a shaggy dough forms.

Press the dough into a puck and refrigerate for 30 minutes.

Roll the chilled dough into a 14-inch circle and return to the refrigerator. The colder the dough remains, the flakier the final result.

Prepare the apple filling: combine thinly sliced apples with lemon juice, lemon zest, freshly grated nutmeg, and cardamom. Let sit for 10 minutes, then drain, reserving the juices.

To assemble the galette, lay a foundation of Brie bricks on the dough, optionally garnishing with freshly chopped rosemary.

Arrange the apple slices in a decorative pattern, such as two concentric circles.

Brush the crust with beaten egg and bake at 400°F for approximately 45 minutes.

Remove from the oven. Brush the filling with the reserved apple juice and the crust with melted butter. Finish with salt and a decorative sprig of rosemary. Cool for approximately 10 minutes before serving.
