   Prepare the apples: Peel, core, and slice 3 pounds of apples (Granny Smith and Honeycrisp work well) into thin, uniform slices about 1/4 to 1/8 inch thick.

   Place the sliced apples in a large bowl and add 2 tablespoons of fresh lemon juice.

   Roll out the first pie crust on a floured surface to about 1/8 inch thick. Transfer it to a 9-inch pie pan by rolling it onto the pin, then gently nudge the dough in from the edges rather than pressing it down. Let the excess dough hang over the edge without trimming.

   Transfer the spiced apple filling into the crust, layering and patting down the apples as you go to eliminate gaps. Dot the top with 2 tablespoons of butter cut into small pieces.

   Roll out the second pie crust to an 11-inch circle. Cut it into strips using a pizza cutter, making them roughly even in width.

   Create a lattice pattern by lifting alternate strips, placing a perpendicular strip underneath, and flipping them back. Continue this pattern until the lattice is complete. Trim excess dough and tuck the edges underneath.

    Crack an egg into a small bowl and beat lightly. Brush the egg wash evenly over all exposed surfaces of the pastry and lattice.

    Sprinkle coarse sugar over the egg wash, which will stick nicely and create a sparkly, golden finish when baked.

    Bake at 425°F for 20 minutes, then reduce the temperature to 375°F and continue baking for about 50 minutes until the crust is golden brown. If the crust browns too quickly, loosely cover the edges with foil.
