Preheat your oven to 350°F. Butter and line a 9 by 13 inch baking dish with parchment paper.

In a large bowl, whisk together the dry ingredients: flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, and allspice.

Fold in the toasted, chopped walnuts and mix gently to coat them evenly in the dry mixture so they don't sink during baking.

In another bowl, combine the wet ingredients: applesauce, oil, room temperature eggs, and vanilla extract. Mix with a whisk until well combined and the eggs are fully incorporated.

Pour the wet mixture into the dry ingredients and fold together with a spatula just until combined. Do not overmix, as this will result in a dense, gummy cake.

Pour the batter into your prepared baking dish and smooth the surface to ensure even baking.
