Heat a large non-stick pan over medium heat.

Prepare the batter: measure one cup whole wheat self-raising flour into a bowl, add an equal cup of milk, one egg, and one level teaspoon of cinnamon, and mix until smooth.

Peel three bananas and cut them lengthwise into halves.

Add a small amount of olive oil to the hot pan, place banana halves cut-side down, and fry for 1.5 to 2 minutes until caramelized and golden.

Spoon three dessert spoonfuls of batter over the caramelized bananas, allowing it to cook into the fruit.

Cook for about 2 minutes until bubbles appear on the surface, then carefully flip and cook the other side for about 2 minutes until golden.

Place the pancake in the center of a plate, top with a spoonful of yogurt, sprinkle with chopped mixed fruits and nuts, drizzle with honey, and add a light dusting of cinnamon.
