Crispy exterior with a luscious caramelized banana filling wrapped in rice paper and air-fried until golden. Made with local bananas, gula melaka, and cream cheese for a rich, gooey center with shatteringly crisp edges.
Gula melaka (or coconut sugar / dark brown sugar)6 tbsp
Cream cheese, softened3 tbsp
Fine saltto taste
Steps
1
Select ripe local bananas that are firm and starchy enough to hold their shape during cooking; avoid overly soft bananas that will fall apart.
2
In a pan, cook the bananas with butter and gula melaka until the sugar begins to caramelize on the cut side of the banana. Remove from heat as soon as caramelization starts to prevent overcooking.
3
Prepare the filling by mixing softened cream cheese with gula melaka, mashing them together until well combined for a rich caramel-flavored filling.
4
Briefly moisten the rice paper by running it through water for about 3-5 seconds, then drain completely. Avoid over-soaking to maintain crispness.
5
Place the filling near the bottom edge of the rice paper, not the center. Fold in the sides and roll tightly, then fold and roll again to ensure the banana is covered in at least two layers of rice paper.
6
Brush the wrapped spring rolls with melted butter to help create a crispy exterior and drive out moisture during cooking.
7
Preheat the air fryer, then cook the banana spring rolls until golden brown and crispy on the outside while the filling remains soft and gooey.
