Barbecued Seafood Platter

   Set up your barbecue. Place a roasting tray with a cake rack on top to create a cooking surface for the seafood.

   Add wood and dried herbs (such as bay leaves) to the barbecue to create smoke. Give a light blow to help ignite them.

   Place langoustines and razor clams on the bottom of the rack. Add prawns and build up mussels around and in between the shellfish.

   Cover the seafood with a heat-proof glass bowl to trap the smoke. Let the shellfish smoke for about 3–4 minutes.

   Prepare the herb dressing by chopping parsley, fennel tops, mint, and chilli together. Add lime zest and continue chopping to combine.

   Transfer the herb mixture to a bowl. Squeeze in lime juice, then add extra virgin olive oil in a 3:1 ratio (more oil than lime juice).

   Remove the glass bowl. Check which shellfish have opened and remove the cooked ones. Collect all the precious shellfish juices.

   Plate the hot barbecued seafood with its juices and drizzle generously with the lime herb dressing. Serve immediately.
