Ingredients
Corn masa (for making the tortilla dough)
~2 cups

Cooked beans
~1½ cups

Epazote leaves

Melting cheese

Queso de rancho (fresh cheese)
~1 cup

Lard or vegetable oil

Steps

Toast the tomatoes, onion, and garlic on a hot griddle until lightly charred. Toast the chile de árbol briefly to avoid burning.

Heat a pot with a small amount of lard over medium heat.

Chop the onion and epazote, then sauté them in the hot lard until fragrant.

Add the cooked beans to the pot and mash them thoroughly with a spoon until well crushed.

Grind the toasted garlic and onion in a molcajete or food processor, adding a pinch of salt.

Add the chiles puyas and chile de árbol to the mixture and grind, then add the tomatoes and grind until smooth.

Take a small ball of corn masa, flatten it, fill with mashed beans and cheese, then fold and seal the edges carefully.

Gently flatten the filled masa and place it on the hot griddle to cook.

Once the tlacoyos are golden, remove from the griddle and brush lightly with lard.

Serve the finished tlacoyos with the prepared salsa, cheese, and sour cream on the side.
