Beef and Bok Choy Chow Fun | Beef And Bok Choy Stir Fry Over Rice Noodles

Prepare ingredients: mince 3 garlic cloves, slice 2 pieces of ginger, cut 3 green onion stalks into 2-inch sections and separate the stem and leafy parts. Cut baby bok choy into halves or quarters depending on size.

Prepare beef: choose a cut with long, uniform muscle fibers and slice it across the grain to make it more tender.

Marinate beef: combine beef with water, soy sauce, dark soy sauce, oyster sauce, sugar, baking soda, corn starch, and black pepper powder. Mix until liquid is absorbed, then add a touch of cooking oil.

Prepare rice noodles and cornstarch mixture: use soft and elastic fresh rice noodles and gently separate them. Mix cold unsalted chicken broth with cornstarch and stir until cornstarch fully dissolves.

Pan fry rice noodles: preheat pan over medium-high heat, add oil and noodles, gently toss until hot. Season gradually with soy sauce, mixing evenly to avoid breaking the noodles. Remove from pan.

Stir fry bok choy: add oil to pan and let ginger slices sizzle briefly. Add salt and sugar, then immediately add bok choy. Stir fry for about 40 seconds, add rice wine, stir fry another 40 seconds, then remove from pan along with ginger slices.

Stir fry beef: add oil to pan, spread beef until bottom is slightly golden brown. Turn beef over, add minced garlic and green onion stems, stir briefly. Add rice wine and let it evaporate.

Make sauce: season beef with soy sauce, dark soy sauce, and oyster sauce, mixing evenly. Add cornstarch mixture and stir as it comes to a boil and thickens.

Finish dish: turn off heat and add bok choy, green onion leafy parts, black pepper powder, and sesame oil. Mix gently and pour beef and bok choy with sauce over the rice noodles.
