Beef Banh Mi

   Slice the tenderloin beef thinly and place in a mixing bowl.

   Prepare the lemongrass by removing the outer tough leaves and chopping the tender inner part; add to the beef.

   Add garlic cloves, salt, ground pepper, five spice powder, fish sauce, oyster sauce, dark soy sauce, cornstarch, and vegetable oil to the beef.

   Mix all ingredients thoroughly and set aside to marinate.

   Prepare the pickles: julienne the carrot and daikon.

   Add the minced onion and hot chili to the carrot and daikon.

   Add salt, sugar, and white vinegar; mix well and set aside to pickle.

   Heat 2 tablespoons of vegetable oil in a pan over high heat; add onions when the oil is hot.

   Stir the onions for about 3 minutes until they soften and begin to caramelize.

    Push the onions to the side of the pan, add another 2 tablespoons of vegetable oil, and add the marinated beef.

    Cook the beef for about 1 minute, then combine everything and stir-fry for another 30 seconds.

    Turn off the heat and transfer the beef and onions to a serving dish, keeping the meat tender and onions sweet.

    Halve the baguettes and spread mayonnaise on the inside.

    Layer the pickled vegetables, cooked beef and onions, spring onion, and cilantro onto the bread.
