Soak 200g of dried rice noodles in warm water for about 30 minutes to 1 hour until softened.

Cut 200g of beef into bite-sized pieces, slicing against the grain for tenderness.

Place beef in a bowl and add the marinade ingredients: soy sauce, dark soy sauce, Shaoxing wine, baking soda, neutral oil, white pepper, and cornstarch. Massage well to coat.

Slice half an onion to medium thickness. Thinly slice the white parts of 3 green onion stalks and cut the green parts into long strips. Mince 2 cloves of garlic. Trim the bean sprout ends if desired.

In a small bowl, mix together 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp dark soy sauce, 1 tbsp Shaoxing wine, 2 tsp sugar, and 1/4 tsp white pepper to make the sauce.

Heat a wok over high heat with 2 tbsp oil until very hot. Add the marinated beef in a single layer and sear for about 30 seconds until the bottom is browned. Flip and sear the other side for 30 seconds. Remove and set aside.

Add 2 tbsp more oil to the same wok and heat over medium-high heat. Add the sliced onion, white parts of green onion, and minced garlic, sautéing for 30 seconds to 1 minute to infuse the oil with aromatics.

Increase heat to high and add the drained noodles. Stir well to coat with the aromatic oil, then let sit undisturbed for about 2 minutes to toast and develop a slight char.

Once the noodles show some char, pour in the sauce and stir well for about 1 minute to coat evenly.

Return the beef to the wok and stir everything together for about 1 minute.

Add the green parts of the green onions and bean sprouts, cooking for about 30 seconds. Turn off heat, drizzle with 1 tsp toasted sesame oil, and mix well. Taste and add salt as needed.

Transfer the beef chow fun to a serving plate and enjoy immediately.
