Prep all ingredients first: mince the garlic, cut the scallion into pieces, slice the ginger, and cube the tofu.

Heat a little oil in the pan, pour in the beaten eggs, scramble until just set, then remove and set aside.

In the same pan, add the beef slices and stir-fry until they change color.

Add the minced garlic and scallion, and continue stir-frying until fragrant.

Season with soy sauce, oyster sauce, and spicy bean sauce, stirring to combine well.

Add the cooked rice and stir-fry quickly over high heat so every grain is evenly coated in sauce and heated through.
