   Prepare the leek by cutting it in half lengthwise, then cutting each half into quarters lengthwise. Slice into 2-inch sections. Rinse thoroughly multiple times under water to remove any sand trapped between layers.

   Slice the beef across the grain of the muscle fiber. Marinate with soy sauce, dark soy sauce, sugar, rice wine, baking soda, cornstarch, black pepper, and water. Mix thoroughly, then stir in oil.

   Heat oil in a medium-high heat pan and stir-fry the leek until coated with oil. Add salt and chicken broth, continue cooking until the leek becomes tender. Remove from the pan.

   Add a bit more oil if needed. Place the beef in the pan and spread it out, allowing the bottom to pan-fry until slightly golden brown. Add minced garlic and stir-fry until the beef is about 80% cooked.

   Season the beef with a small amount of soy sauce and dark soy sauce, continuing to stir-fry until the color is even throughout.

   Pour chicken broth or water into the pan; the liquid will quickly boil and create a sauce coating the beef. Return the leek to the pan, add sesame oil, and toss everything together quickly until combined.
