Gather and prepare all ingredients. Have ready 1 kg of ground beef, rice, chipotle in adobo, black pepper, onion, tomato, fresh mint, egg, cilantro, and vegetables (zucchini, carrot, potato, corn). Rinse everything thoroughly. Also prepare the broth base with 4 tomatoes, 3 garlic cloves, and a chunk of onion.

Heat a little oil in a pot. Cut the zucchini, carrots, and potatoes into large chunks.

Add the cut vegetables to the hot oil, sprinkle with salt, and let them partially cook.

Prepare the broth base: Cut the 4 tomatoes and add to a blender with onion, 3 garlic cloves, half a chipotle pepper, a pinch of salt, and water. Blend until smooth.

Once vegetables are partially cooked, pour the tomato mixture into the pot, add the corn and additional water to form the broth base. Bring to a boil.

Prepare the meatballs: Finely chop the cilantro, mint, and onion. In a bowl, combine the ground beef with the chopped herbs and onion, egg, black pepper, rice, and salt. Mix well with your hands.

Knead the mixture with your hands until well combined. Shape into meatballs of desired size.

Once the broth comes to a boil, gently add the meatballs to the pot and let them cook together with the vegetables.

Gently stir the meatballs to ensure even cooking. Allow everything to simmer until the meatballs and vegetables are completely cooked through.

Once everything is fully cooked, ladle the soup into bowls and serve. The dish is savory, aromatic, and bursting with flavor.
