Heat a wok or large pan over high heat, add 1 tbsp oil, then stir-fry the chopped green beans with a pinch of salt for 1.5–2 minutes until slightly charred. Remove and set aside.

Add another tbsp of oil to the pan, then add the ground beef and a pinch of salt. Cook over high heat for about 5 minutes, breaking it up until it's crumbled to pea-sized pieces.

Add the chopped shallots or red onion and stir-fry for 2–3 minutes; splash in a bit of water if things stick to the pan.

Add the grated ginger and garlic, stirring for about 1 minute until fragrant.

Add the chopped spinach and the reserved green beans, stirring for about 1 minute until the spinach wilts.

Mix together the oyster sauce, fish sauce, soy sauce, stock, and brown sugar, then pour around the edge of the pan. Simmer for 30–60 seconds to glaze everything.

Turn off the heat and stir in the basil. Serve over rice topped with a crispy fried egg.
