Beef with Onions in Oyster Sauce

   Slice beef thinly against the grain, about 2–3 mm thick.

   Combine beef with cornstarch, salt, white pepper, light soy sauce, water, oil, and egg white in a bowl. Mix well—the egg white and starch will create a protective coating that keeps the meat moist and tender. Let marinate for 15 minutes.

   Prepare the sauce by combining oyster sauce, light and dark soy sauce, sugar, salt, white pepper, and broth. Separately mix cornstarch with cold water for thickening.

   Prepare vegetables: cut onion into thick wedges, chili into rings, ginger into thin strips, mince garlic, and cut spring onion into pieces.

   Heat oil over high heat in a wok. Add marinated beef and quickly sear on all sides until browned. Remove and set aside.
