Prepare a whole chicken (approximately 4.5 lbs) with clean, nice-quality skin. Remove any excess skin and trim the tail.

Brush a thin layer of mayonnaise on both sides of the chicken to help seasonings adhere.

Generously apply Wow seasoning to the first side, rubbing it in evenly, then add a layer of Adam's poultry seasoning.

Flip the chicken and apply mayonnaise to the other side. Generously apply Wow seasoning, making sure to season under the wings, then tuck the wings back. Add poultry seasoning to this side as well.

Pour out a small amount of beer from the can to make room for expansion. Carefully open the top of the can with a knife to create a larger hole.

Carefully place the seasoned chicken over the beer can, positioning it so the chicken sits upright.

Place the beer can chicken on a preheated grill over medium indirect heat. Arrange it to stand upright and cook evenly.

After about 45 minutes of cooking, insert a meat thermometer into the thickest part of the breast to monitor internal temperature. Rotate the chicken to ensure even heat distribution.

Prepare the barbecue sauce by mixing together 1 cup of barbecue sauce, 2 tablespoons of red wine vinegar, 1/4 cup of beer, and 1/2 teaspoon of Wild seasoning. Whisk until well combined and taste to adjust seasonings.

Once the chicken reaches an internal temperature of around 160°F, begin basting it with the prepared barbecue sauce, applying it evenly on all sides.

Continue cooking until the chicken reaches an internal temperature of 168°F. Apply sauce one or two more times if desired, allowing it to caramelize and set on the skin.

Remove the cooked chicken from the grill and let it rest briefly. Cut and serve the chicken, starting with the wings and thighs, then slicing the breast meat.
