Cut pork shoulder into large chunks and season with salt and black pepper.

Prepare vegetables: peel celery and cut into large chunks, peel and cut carrots and potatoes into large diagonal pieces, and cut onions into large chunks.

Prepare seasonings: prepare chili (seeds can be removed), mince about 2 cloves garlic, measure out 15g curry powder and 5g smoked paprika, and set aside one small curry block.

Heat the pot over medium heat, add butter until melted, then sear the meat on all sides until golden brown.

Add chili and minced garlic, then add curry powder and smoked paprika, reduce heat to low, and stir until fragrant.

Increase heat to high, pour in two cans of beer, stir gently and scrape the sides, and simmer for 5 minutes after boiling to evaporate the alcohol.

Dissolve the curry block in hot broth, stir it back into the pot to enrich the flavor and aroma. Add plum wine if you prefer less bitterness.

Arrange all vegetables in the pot and season with black pepper. No need to stir.

Cover the pot, reduce heat to low, and simmer for 40–50 minutes without opening the lid.

Serve over rice with fresh greens, then ladle the hot curry sauce over top. The flavors meld better if enjoyed the next day.
