1
Combine black and white sticky rice. Rinse the rice in clean water until the water runs clear, then soak for at least 12 hours until the grains are fully hydrated. After soaking, rinse three more times with fresh water and drain thoroughly.
2
Pour the drained rice into a 9x9-inch aluminum tray, spreading it evenly in a single layer.
3
In a pot, combine 200 grams of white sugar, 1 teaspoon of salt, and 400 ml of coconut milk. Heat on the stove until the sugar and salt dissolve completely, then turn off the heat.
4
Pour the coconut milk mixture over the rice in the tray, then gently stir to ensure even absorption.
5
Fill a steamer pot with water to about halfway up the sides and bring to a boil over high heat. Place the rice tray into the steamer, cover, and steam on high heat for at least 1 hour until the rice is fully cooked and soft.
6
While the rice is steaming, prepare the custard topping. Beat together 3 chicken eggs and 3 duck eggs in a bowl. Add 300 grams of coconut sugar, 1 teaspoon of salt, 300 ml of coconut milk, and 5 pandan leaves.
7
Thoroughly blend the egg mixture and pandan leaves until very smooth and creamy. Once fully combined, remove and discard the pandan leaves.
8
Strain the custard mixture through a fine-mesh sieve for an even smoother texture. Remove any bubbles from the surface with a spoon to prevent cracks during steaming.
9
Check if the sticky rice is fully cooked and soft by piercing it with a pointed stick or knife tip. If it's soft and cooked through, proceed.
10
Pour the strained custard mixture over the cooked rice and cover the steamer. Continue steaming on the lowest heat for at least 40 minutes, opening and closing the lid every 7 minutes for about 30 seconds each time to release steam and prevent cracking. Repeat this open-close cycle about 7 times.
11
After 40 minutes, test the custard topping with a pointed stick. If no liquid leaks out, it is fully cooked. Turn off the heat and let cool completely.
12
Once completely cooled, the rice and custard will darken slightly and appear smooth and beautiful. Cut into desired-sized pieces using a knife or cutter.
