A traditional Indian Diwali sweet made by frying gram flour droplets in oil and then coating them with sugar syrup. Golden, crispy boondhis are rolled into balls and finished with roasted cashews and raisins.

Mix gram flour with baking soda and food colour in a bowl.

Gradually add water, stirring until you achieve a smooth batter with a pouring consistency.

Prepare the sugar syrup by combining sugar, water, edible camphor, cloves, and cardamom powder in a pot, stirring well.

Bring the sugar syrup to a boil and cook for about 2 minutes until it reaches the one-string stage (thread consistency).

Heat oil in a deep pan. Once hot, use a boondhí maker (perforated ladle) to press the batter into the hot oil, creating small droplets, and fry until golden.

Remove the fried boondhis and drain excess oil.

Add the fried boondhis to the sugar syrup and stir quickly until well coated and combined.

Spread the mixture on an oiled plate to cool slightly, then roll into balls while gradually incorporating roasted cashews and raisins.
