Marinate the mackerel with seasoning powder, sugar, salt, and good quality fish sauce. Cover and refrigerate for a few hours to let the flavors penetrate the fish.

Sauté shallots and chili peppers, then stir in chili sauce, ketchup, and half a cup of water. Bring to a boil, then turn off the heat.

Line the bottom of a clay pot with sliced herbs and chopped scallions, place the marinated fish on top, then pour the hot sauce over it.

Cover and simmer over medium-low heat for about 15 minutes.

Open the lid and continue simmering for another 5 to 10 minutes to let the sauce thicken. The fish stays intact and infused with a sweet-sour pineapple flavor, perfect with rice.
