Clean the squid thoroughly, remove the innards and the blood vessel running down the center, then split each piece in half lengthwise for even cooking.

Prepare the tamarind sauce by combining tamarind concentrate, sugar, fish sauce, and black pepper in a bowl.

Mince the garlic and chili pepper, then stir-fry in oil until golden and fragrant.

Deep-fry the squid until both sides are golden and crispy, then drain on paper towels to remove excess oil.

In a fresh wok or pan with cooking oil, add the fried garlic and chili, then pour in the prepared tamarind sauce.

Add the fried squid to the sauce and toss continuously until the glaze thickens and coats the squid evenly.
