Prepare the chicken wings by cleaning with lemon juice and vinegar and removing excess feathers. Coat with a little oil and season with salt, mixed herbs, freshly cracked black pepper, spiced Jamaica red seasoning, curry powder, and homemade green seasoning.

Mix all seasoning together thoroughly using your hands. Marinate overnight for best results if you have time, or at least 10 to 15 minutes.

Heat oil in a pot over medium-high heat, then add brown sugar. Let it caramelize for about 5 minutes until it turns dark brown, being careful not to burn it as it will become bitter.

Add the seasoned chicken wings to the caramelized sugar, cover, and let sit for about 5 minutes without stirring.

After 5 minutes, stir the wings and allow all the juices to dry up—this is the key to developing a rich stew flavor.
