A simple homemade barbecue sauce designed for burnt ends. Onion and garlic are sautéed then blended with ketchup, Worcestershire sauce, apple cider vinegar, and chili powders into a smooth, rich, mahogany-colored sauce.

Heat a pan, add ghee, then sauté the chopped onion and garlic until softened and fragrant.

While the pan is still hot, stir in the Worcestershire sauce and ketchup, then add the apple cider vinegar and kosher salt, stirring to warm through.

Switch to another pot and use an immersion blender to purée the onion and garlic mixture until smooth.

Add the brown sugar, New Mexico chili powder, ancho chili powder, black pepper, and water (or apple juice), then continue mixing.

Blend the entire sauce with the immersion blender until silky smooth with a deep mahogany color.

Taste the sauce partway through cooking; if it needs more balance, stir in an extra 1/4 cup brown sugar and 1/4 cup apple cider vinegar to better complement the burnt ends.
