Ingredients

Preheat your oven to 425°F.

Add 2 cups (240g) of all-purpose flour to a large bowl.

Add 1 tbsp baking powder, 2 tsp granulated sugar, 3/4 tsp sea salt, and 1/4 tsp baking soda; whisk together to combine all dry ingredients.

Cut 6 tbsp (85g) of cold unsalted butter into cubes and sprinkle into the flour mixture. Using your hands or a pastry blender, work the butter into the flour until the mixture resembles pea-sized pieces.

Gently drizzle in 3/4 cup (180ml) of cold buttermilk while stirring. Mix minimally, just until the dough comes together in a shaggy state without fully mixing.

Lightly flour your work surface and pat the shaggy dough into a rectangle about 10 by 8 inches.

Fold the dough in thirds like a letter. Rotate 90 degrees and roll out to an 8 by 10 inch rectangle about 1/4 inch thick. Repeat this fold-and-roll process 2 more times. After the final fold, roll out to a 10 by 5 inch rectangle between 1/2 and 3/4 inch thick.

Cut out biscuits using a 2.5 inch round cookie cutter. Dust the cutter with flour between cuts to prevent sticking.

Place the cut biscuits on a parchment-lined baking sheet, positioned close together to help them rise evenly. Gather and re-roll any scraps to cut additional biscuits.

Brush the top of each biscuit with buttermilk, leaving the sides free. This will help create a golden brown top.

Bake in the preheated 425°F oven for 12 to 15 minutes, or until the tops are golden brown.

While biscuits bake, make honey butter by mixing a few tablespoons of butter with a spoonful of honey until combined. Optionally add a pinch of salt or a dash of vanilla for extra flavor.

Remove the hot biscuits from the oven and serve warm with honey butter.
