Prepare the flatbread dough by mixing flour, sugar, water, yeast, olive oil, and salt (see full recipe on website). Let the dough rise for 1 to 2 hours. Flatbread dough will not rise as much as pizza dough because it is thinner, crispier, and chewier.

Turn the risen dough onto a lightly floured surface. This makes two flatbreads. Roll out with a rolling pin until thin and even in thickness, but not translucent.

Preheat the oven to 550°F with a baking steel inside for at least 30 minutes. If you don't have a baking steel, a baking sheet works fine. Transfer the rolled dough to a pizza peel, ensuring it doesn't stick, then place it on the hot steel and bake for about 4 minutes until partially cooked.

Remove the partially cooked flatbread and brush with olive oil. Sprinkle sesame seeds around the edges and Italian seasoning on top. Adding these seasonings now prevents them from burning before the flatbread crisps up completely.

Return the flatbread to the oven and bake for another 3 to 4 minutes until crispy and golden brown.

Top the hot flatbread generously with Parmesan cheese and plenty of freshly ground black pepper. The heat from the bread will warm the cheese and pepper, creating a sensational flavor.
