Ingredients
calabacitas (zucchini)

Steps

Prepare the calabacitas by removing the ends and cutting them into approximately 1 cm cubes.

Prepare the sauce by boiling 5 tomatoes, 1 serrano chile, a small piece of onion, and 2 garlic cloves in water until soft, approximately 8 minutes.

Transfer the softened garlic, onion, and chile to a blender with some of the cooking water and blend. Add the tomatoes and blend until smooth.

Pour the prepared sauce into a bowl and set aside.

Heat oil in a pot and sauté the diced onion and corn kernels over medium heat for 5 minutes until the onion becomes translucent.

Add oregano and the diced tomato, season with salt, and stir to release the juices. Cook for 5 minutes.

Pour in the prepared sauce, season with salt or chicken bouillon powder, and let the flavors blend for 6 minutes.

Add the poblano strips and calabacitas cubes, season with salt, stir, reduce the heat to medium-low, and cover.

Cook covered over medium-low heat for 15 minutes until the calabacitas are almost tender and the poblano has released its flavor.

Stir in cilantro and add the cheese cubes. Cover and allow the calabacitas to finish cooking and the cheese to soften for about 5 minutes.

Turn off the heat and let the dish sit for 10 minutes to allow the calabacitas and cheese to fully soften. The dish is now ready to serve.
