Steps

Clean and seed the pumpkin, then cut into appropriately sized chunks. If the pumpkin is very hard, steam it slightly to soften before cutting.

Heat a small amount of water in a large pot or heavy-bottomed pan.

Add the cinnamon sticks to the pot, then carefully layer the pumpkin chunks on top.

Sprinkle the piloncillo evenly over the pumpkin.

Cover the pot and cook over medium heat for approximately one hour, until the pumpkin is tender and a syrup forms. The contents will settle down as they cook, which is normal.

Once cooked, carefully remove the pumpkin and let it cool. The pumpkin will have absorbed the sweet syrup and can be enjoyed on its own or served with atole or milk.
