unsalted butter, softened at room temperature½ cup
eggs2
vanilla extract2 tsp
whole milk ricotta½ cup
milk1 cup
Steps
1
Combine the flour, baking soda, baking powder, salt, and cinnamon in a bowl and stir well. Add the candied orange peel and mini chocolate chips, mix thoroughly, and set aside.
2
In a large bowl, combine the granulated sugar with the lemon zest and orange zest. Gently rub the mixture together with your fingertips for about a minute to release the aroma and essential oils.
3
Add the softened butter and whisk together with a handheld whisk (or stand mixer) until combined.
4
Add the eggs and vanilla extract, continuing to whisk until the mixture begins to come together.
5
Stir in the ricotta and milk until well combined.
6
Fold in the reserved dry mixture with a spatula until the batter comes together. The batter will be thick, which is expected.
7
Pour the batter into a greased bundt pan and smooth out the top evenly.
8
Bake in a 350°F oven for about 45 minutes until fully baked.
9
Remove from the oven and allow the cake to cool before serving.
