Start browning the pork ahead of time in a pot, since it takes a while to cook through and develop color.

Prepare the salsa ingredients: tomatoes, serrano peppers, a small chili, an extra quarter tomato, garlic and onion.

Rinse the rice, then combine it in a pot with onion, a little salt, water, and a splash of oil to cook the morisqueta rice.

Let the rice simmer gently until fully cooked, while keeping an eye on the pork as it continues to brown.

Once the pork starts browning, add a bit of lard to help it turn golden and develop more flavor.

While the pork keeps browning, blend the tomatoes, peppers, garlic and onion with a little salt and water to make the salsa, working in two batches since it won't all fit at once.

Once the pork is golden brown, pour the blended salsa into the pot with the meat.

Let the pork simmer in the salsa, stirring occasionally so the meat fully absorbs the sauce's flavor.

Meanwhile, heat up the pre-cooked beans to have everything ready together.

Once the pork is done simmering, remove it from the pot — it should look rich and tender.

To serve, plate the morisqueta rice first, add the beans, then top with the pork in salsa and enjoy.
