Heat cooking oil in a pan and add the minced lemongrass, shallots, and chopped red chili. Stir-fry until the lemongrass and shallots turn golden brown.

Pour in the orange juice and bring to a boil to help preserve the sauce longer.

Add the fresh chao paste, chao sauce liquid, sugar, chicken bouillon powder, black pepper, oyster sauce, chili sauce, and fish sauce in sequence.

Transfer all ingredients to a blender and process until the sauce reaches a smooth, fine consistency.

Pour the sauce into a container and allow it to cool. Store in the refrigerator in an airtight container for up to one month.

To use, combine 200g of sauce with 1kg of meat and mix thoroughly. Let it marinate for just 15 minutes for the seasonings to penetrate the meat.

Roast the marinated meat in the oven. Serve with fresh vegetables, herbs, pickled vegetables, or cucumber on the side.
