Chaozhou rice gruel is a simple, unseasoned rice porridge made by simmering short-grain rice in water at a 1:20 ratio and stirring occasionally to break down the rice slightly, creating a milky texture. The plain gruel can be served hot in winter or cooled for summer. It is traditionally eaten alongside salty-umami accompaniments like fried preserved daikon, which provide flavour contrast to the bland base.
