Bring water to a boil in a pot and add the tomatoes. Simultaneously, toast the chile morita, a piece of onion, garlic cloves, and a small handful of chile de árbol in a separate area until fragrant and toasted. Once the chiles are properly toasted, add them to the pot with the tomatoes, onion, and garlic.

Prepare the chard by first cutting the fresh, washed greens into thin strips, then chopping them into smaller pieces.

Dice a quarter portion of ham into small cubes and add it to the chopped chard.

Crumble half of the ranchero cheese and add it to the mixture, stirring well to combine with the ham.

Mash five cooked potatoes and add them to the mixture, stirring until well combined.

Add a pinch of salt and then incorporate nine eggs, stirring well until all ingredients are thoroughly combined.

Add three tablespoons of flour and mix well to ensure the batter holds together and doesn't fall apart when cooking.

Heat oil in a skillet and spoon the mixture to form fritters. Carefully flip them to cook both sides until golden brown. Remove the finished fritters and place them on a plate.

Prepare the sauce by blending the cooked tomato and chile mixture with onion slices, salt, and some of the cooking liquid. Bring the sauce to a boil.

Place some of the fritters into the simmering sauce while keeping others dry. Serve according to preference, with some fritters in the sauce and others on the side.
