Select a giant leek. Remove the outermost dirty leaves and save the healthier green parts for later use such as stock or soup.

Thoroughly wash the wide parts of the leeks using lukewarm water. Soak, scrub, and repeat until the water runs clear.

Make seaweed butter from scratch, or source it from specialty food suppliers.

Prepare the vinaigrette by whisking mango vinegar with olive oil, then add chopped lemon supreme and juice. Season with salt and Tasmanian pepper corns.

Turn fresh mango into brunoise (optional). Mango pairs well with seafood and helps balance the spicy, salty, sour, and sweet flavors.

Make bread tuile by mixing water, olive oil, flour, and salt together. Let it rest, then cook. Bread tuiles can be made in advance and stored in a sealed container with silica gel packets. If they lose crispiness, reheat in a 300°F (150°C) oven for about 5 minutes.

Turn on the broiler or salamander. Lightly oil the baking tray and leeks. Place under intense heat and rotate every 5 minutes until completely charred, about 30 minutes total.

Turn off the broiler, leave the leeks in the oven with the door ajar for about 10 minutes.

Remove the charred leeks from the oven and let them rest for about 30 minutes before cutting.

Make an incision in the leek and fill with seaweed butter. Once melted and spread, add crab meat, mango brunoise, and bread tuile on top.
