Slice the onion thinly into ribbons, then mince as finely as possible. Chop the fresh parsley finely.

Cut the chicken into small cubes.

Heat olive oil in a pan and sauté the minced onions for 10–15 minutes, stirring regularly until they turn golden.

Add the diced chicken and some of the parsley; mix well.

Season with salt, black pepper, and Dijon mustard (1 tablespoon); stir and add a splash of water.

Cook for about 10 minutes, then stir in the heavy cream (20 ml) and remove from heat.

Take a tortilla, place cheese strings on it, roll it up, and secure with toothpicks.

Form the rolled tortilla into a triangle shape by placing cheese strings at the three corners and securing with toothpicks to keep the cheese sealed inside during baking.

Fill the three sides with the chicken mixture and secure with toothpicks from all three corners to ensure no filling leaks out.

Sprinkle grated mozzarella cheese over the top.

Bake in a preheated 180°C (350°F) oven for 10–15 minutes until the cheese is melted and the edges are lightly golden.
