This cheese potato gratin is a revisited version of Tartiflette, featuring layers of potatoes, a smoked bacon and onion mixture, and frozen Reblochon cheese. Baked until golden brown, it is the perfect dish for a family gathering.

Ingredients

Reblochon cheese~400 gest.

Cook smoked bacon with onions in butter along with fresh herbs, salt, and pepper for about 20 minutes. Deglaze with white wine and set aside.

Freeze the Reblochon cheese for about an hour to make it easier to slice and handle.

Peel the potatoes and slice them thinly using a mandoline or chef's knife.

Grease a shallow baking dish with room temperature butter, then begin layering: spread potato slices and season with salt, pepper, and nutmeg.

Spread some of the bacon and onion mixture over the potato layer, then add slices of frozen Reblochon cheese.

Repeat the layering until all ingredients are used. If desired, add a drizzle of heavy cream between layers. Season each layer with salt and pepper.

Cover the dish with parchment paper and foil, then bake for about 2 hours until the potatoes are cooked through.

Remove the parchment paper and foil and continue cooking until the top is golden brown.

Let the gratin rest for 30 minutes before serving. It is even better the following day once the flavors have fully melded.
