Place Yukon Gold potatoes in cold water with the cut garlic pieces. Bring to a boil and cook until the potatoes are completely tender and a toothpick pierces through easily.

Drain the potatoes and gently remove the skins. While still hot, press the potatoes and cooked garlic through a potato ricer to create a smooth, fine texture.

Keep the mashed potatoes on low heat to maintain temperature. Add the shredded Gruyère and Port Salut cheeses, gently stirring by hand until the cheese melts. Avoid using a machine to prevent the mixture from becoming gummy.

Season with salt and black pepper to taste. Pour in approximately half a cup of heavy cream and stir gently over low heat until everything is well combined, adjusting the consistency to your preference.
