Cook the bacon slowly over medium heat until the fat renders and the meat is crispy without burning.

Make a béchamel sauce: melt butter in a pot, whisk in flour, then gradually add milk while stirring constantly until smooth.

Remove the rind from the Brie cheese using a vegetable peeler if desired, then stir it into the sauce until melted. Add the Cheddar cheese and mix until fully incorporated.
